- Choose Cooking Oil Smartly – Before we think about reusing the cooking oil we must choose the oil wisely. All oil has its particular smoking point. Smoking point is a particular temperature after which oil starts breaking down and smoking. Beyond this point smoke starts emerging from the oil. One should use oil having high smoke point like canola and peanut oil. Once oil is heated above its smoke point a foul smell starts coming which gives pure indication that the oil is no longer usable because excessive of heating and presence of minute particles in it.
The smoke point of oil gets lowered after each use. Reusing such oil will make the food more viscous and also spoils the flavour of dish. There is also a possibility of oils turning rancid. In many cases it is observed that the decomposed oil contains free radical which may cause some serious health issues. So smell before reusing the oil
- Fry Right- There is no proper attention towards the control of temperature, is the cause of deep frying disasters. Maintaining temperature not only helps in proper cooking of food but also it also retains the longevity of your oil.
- Filter the Fat- We should drain the oil and filter the impurities from it after each subsequent fry. Any impurities and undesirable extras like loose crumbs or bit of batter may wreck the integrity of soil and results in bad odour.
- Not to use many times- Every time we reuse oil it gets destabilized before decomposing after each fry. A chemical reaction occurs at molecular level of oil while heating again and again. Hot oil gets polymerised by joining their molecules to bigger molecules which consequently gives thick, gummy and dark coloured oil and harmful foods. If you find any sign of rancidity then it is high time to change the oil.
How to Filter?
After using the oil once keep it aside to be cool. When the oil becomes cool, put a cheese cloth over the pot of oil. The oil should be poured into another vessel and again pour it through very fine filter. Repeat this process until all the minute chunks of food get discarded and clear oil is obtained. Store it in airtight container and keep it in cool away from the reach of sun.
